A few days ago, I ran a poll on my Instagram (instagram/cal.conn for those of you willing to go see). So essentially, the poll question was to help me pick one dessert I could indulge in sans guilt. The choice was between cloud bread or air pancakes (I named them so). While the results were almost equally distributed between the two, I decided to make an entirely different dessert altogether!
The pancakes turned out delicious! They were light and spongy, had an incredibly low amount of carb and were easy to make. Of course it was my first time making them, and there are a few things I would like to do differently, but for now, I am quite happy with the way they turned out.
What You’ll need:
2 large eggs
30 gms cream cheese (mine were in cubes)
1/2 tbsp baking powder
1/3 cup sugar (I would wanna replace this with other sweetners)
less than 1/2 cup sifted flour
1 pinch cinnamon powder
1 tbsp greek yoghurt
How to Proceed:
Step 1 is to separate out the egg whites and yolks ever so carefully.
Step 2, beat the egg white into a frenzy till it becomes white and opaque.
Then add the sugar in two batches and whisk away until the mix turns shiny and looks like clouds.
Step 3 – mix the egg yolk with cream cheese and greek yoghurt till it becomes a homogeneous mix.
Step 4 is where you abandon using the stand mixer or electric blender and instead use a spatula to mix the sifted flour, baking powder and cinnamon into the egg yolk mix.
It won’t look much at this point. But I promise it’ll come together beautifully.
Step 5 is perhaps the most dangerous stage, for it involves combining the luscious egg whites to the flour mix ever so gently so as not to knock out the air you worked so hard to incorporate, yet mix it together finely. Use a metal spoon and folding motion to do so.
Eventually you should end up with something that looks like this.
Step 6 will include ladling up some amount of this decadent batter into a pan smeared with a tad bit of butter. You’ll know it’s ready to flip when you see the edges start to golden and bubbles forming on the top. I’m sorry I don’t have a picture for this, I was clearly lost in the excitement.
Step 7 is to enjoy the pancakes of course! Drowned in a healthy serving of fresh cream and topped off with some homemade unsweetened berry Compote.
I will obviously make this again, changing around a few things. Imagine this in chocolate? Well, I’d love to see pictures when you try them, meanwhile I’m off to see Willy Wonka to pitch this idea!
